Ahh…how nice it was to have a long weekend. I miss my daily blogging, but as many of you may know, I’ve been able to find a much-needed job. There’s a season for everything, and nothing remains the same. So if you don’t like where you’re at, don’t worry…change is coming. But as for me, I do like where I’m at. I just need to find that balance (once again) between full-time work, family, house and spirituality.
This long Veterans Day weekend helped me get closer to attaining that balance. I was able to do house work, blog, spend time with the kids & grand-kids, enjoy some personal time, and even had time to cook some exceptionally delicious, ME-gan meals!
When I started making this soup that I’m about to tell you about, I really didn’t think it was going to be anything to write home about, and therefore didn’t take down precise measurements. Oh, how I could kick myself right now!
Basically, I started off sauteing oil, onions, garlic, carrots, yellow squash and zucchini in a big soup pot. I seasoned it with all the various seasonings you see in the photos – yes…everything; thyme, rosemary, oregano, fennel seed, poultry seasoning, cloves and last, I threw in a cinnamon stick for good measure.
It was a little of this and a little of that! For broth, I used half veggie broth and half creamy butternut squash soup. I really had no idea how it was going to turn out; I wasn’t expecting ‘out of this world,’ that’s for sure!
To go with the soup, I made some ME-ganly delicious cornbread! For this I used cornmeal, gf all purpose flour, almond coconut milk, creamed corn, one stevia packet, and some butter – that’s about it. My goodness was it good!
This meal was the perfect welcome into the cooler weather and no doubt the holiday season too. It was like eating pumpkin pie in a soup – truly delicious, I wish you could have tried some…maybe next time. Better still, make it for yourself and find out!
