Life seems like it’s made up of many roads leading us to where we are headed. Can it be that there is a right and a wrong road? I don’t think so. I believe they will all get us there in their own unique way of doing so. With this in mind, we should not allow ourselves to get fixated on making the right decision! I can personally & honestly say that all the mistakes I have made in my life have worked out for the better in the end! Worry for nothing!
Life is about learning, and from my experience we learn more from our mistakes than anything else. In other words, don’t be afraid! Don’t let the fear of doing something ‘wrong’ shut you down. Life is short and tomorrow is not promised to anyone – so live! Remember too that life is not about the ‘destination,’ so if that is what we focus on then we miss what happens along the way! Don’t get me wrong…the ‘destination’ is important, that is if your destination is HEAVEN! And mine certainly is! But what I’m saying is, enjoy “getting there,” because that is what living is all about! It’s about the journey! We must even enjoy the ‘stumbles.’ Simply get up & press on! Is there any other way?
Smile, laugh, love and live – this keeps the soul alive and young! When we are not healthy in mind, body and spirit, we can lose ourselves, causing life to pass us by and missing out on years of happiness that could have been. Lord knows this has happened to me. Thank God for the ME-gan Lifestyle – it not only changed my life, but also saved it! Life is still full of struggles; I don’t think they will ever go away. We climb one mountain only to face another. Facing it with a smile is the secret! Climb your mountain, don’t let it stop you!

A friend of mine, who happens to be a wonderful cook, introduced me to this awesome cold bean & corn salad! Me, being the crazy Sicilian girl that I am, changed it up a bit turning it into un piatto con un calcio – “a dish with a kick,” by adding some ME-gan style pesto, balsamic vinegar & a dash of fresh mint! This dish is AMAZING! It’s good any time of day, even breakfast! It can be served as a side or enjoyed as a snack – there is no wrong way!
I say let’s all get to where we are going in life the best way possible - HEALTHY! Here is the recipe, along with some pictures of Alyce’s cold bean & corn salad! Try swapping out one of your not so healthy snacks for this nutrient rich bowl of flavor! It all begins with CHANGE! Get started today!
- 1 cup corn
- 1 cup black beans, rinsed
- 1/4 cup each: red, green, yellow pepper minced
- 1/4 cup minced red onion
- 1/2 cup fresh lime juice
- 1/4 cup cilantro
- 1 teaspoon cumin (more or less to taste)
- 1/4 cup olive oil
- One small handful of torn mint leaves – optional
** For un piatto con un calcio (a dish with a kick), add 1/4 cup ME-gan style pesto (gluten & dairy free), and 1 Tbsp. balsamic vinegar. **
Mix 1st 4 ingredients. For dressing, whisk the dressing ingredients and stir into bean/corn mixture. Chill and serve.
