I love the fact that FOOD HEALS! God sure knew what HE was doing and made sure to provide us with all we need. Who needs artificial sweeteners, colors, and so on? Who needs processed JUNK food?

With all the natural goodness that’s provided to us by God and Mother Nature, it seems crazy to consider anything else. Sure, I use canned and frozen – you better believe it. I always run into times when I don’t have fresh on hand…it’s just inevitable. But I make sure to buy items that are basically plain, with no added ingredients other than the product itself.
Now that cold and flu season seems to be upon us, it’s important that we stay on top of our health and take control before sickness invades! I myself have been fighting off a cold/flu by taking lots of vitamin C and eating fresh oranges from my tree (I love my orange tree so much!)
Last night I was feeling it, and became very lazy. I couldn’t seem to get off the couch, so I accepted it and decided to curl up and watch ‘A Christmas Carol.’ What a great Christmas classic, with some great lines! It was the right decision on my part. When our bodies speak, we must listen. My body needed rest. Around 10pm at night my throat was sore and my stomach was a little queasy. So I decided to get up and make some soup. Of course my soups are never the same twice; I make them based upon what I have in the house at that time.
This soup turned out to be amazing! It was the best soup I’ve ever had – serious! I kid you not, and Lee agrees! We both ate two bowls! But the miracle of this soup was not only the flavor, but it actually made me feel better, immediately! It soothed my throat and warmed my belly; it brought me back to life. I slept like a baby last night, and feel so much better today. Prayers and eating right have always provided blessings to me.
So…this impromptu soup is now on the menu for today’s posting. I didn’t really measure out the seasonings, so bear with me…as I ‘guesstimate.’ Sorry, but it’s just the way I cook; I don’t follow recipes, I move fast, and hope for the best…which I always seem to get! I’m creative and use my imagination, I’m seldom disappointed this way.
Mary’s Healing Vegetable Soup
Ingredients
- 2 32 oz. containers of O Organics organic Vegetable Broth
- 2 14 1/2 oz. cans of Del Monte Fresh Cut Whole New Potatoes
- 1 lb. frozen mixed vegetables
- 1/2 lb. frozen chopped spinach
- 2 med. sized carrots finely diced
- 1/2 large onion finely diced
- 1/2 tsp. garlic powder
- 1 tsp. oregano leaves
- 1/2 tsp. poultry seasoning
- 1/8 tsp. cayenne or even a little less (I just sprinkle a little on top..I like it hot, just be careful!)
- 1/2 tsp. rosemary
- 1/2 tsp. rubbed dalmation sage
- 1/8 to 1/4 tsp. each Salt & black pepper
- 1/4 cup quinoa – rinsed well and uncooked
Directions
In a large pot pour in Vegetable broth, turn on medium low heat, cover with lid slightly cracked. Meanwhile, in a medium sized frying pan over medium heat, sauté carrots & onions for about 5 minutes. Add in spices: garlic powder, oregano, poultry seasoning, cayenne, rosemary, sage and S&P, continue to sauté for another 5 minutes. Soup should be at a low boil by now, add in the sauté mixture, and stir. Keep at a low boil. Add in mixed vegetables, potatoes, spinach and quinoa, stir. Cook on a low boil, covered with lid slightly cracked, for about 1/2 hour longer. Serve and eat! FEEL BETTER!
