So, the girls are at the beach are they? I think I’ll join them. This was me last week. So I get there and they’re all eating their meats, seafood, junk food, desserts and so on. My sister looks at me and says “I don’t know what you’re going to eat.” Well, they all know ‘what’ I eat so I’m not sure what the mystery was all about, but any whoooooo….all it took was a trip to Harris Teeters and I was set.
I found these soy noodles that I’ve never seen or tasted before. I love trying out new products and these paid off. They are quite delicious and versatile to many meal options, just get creative!
There were also times at the beach when we went out to eat, so what did I eat? No problem, I have the routine down. My options are usually a baked potato, steamed veggies, or a salad. While dining at Harpoon Hanna’s, the girls enjoyed their seafood stuffed potato wedges topped with melted cheese & dipped in sour cream, bacon wrapped scallops, and crab puffs, and I ate a modest salad. It was not the best salad I ever had, but it sufficed.
The funny thing is that they eat all this food and then complain of being overweight, gassy, bloating, cramping, migraines, etc. I just shake my head, what can I say!?
Self-control does not come without discipline and hard work, but overindulgence is quite EASY.
The question is, “What’s more important to you? Good health, or eating everything and anything?” It’s really not more complicated than that at all. It’s a personal choice. I love when they offer me food, “do you want a bite?” What don’t they get? How long have I been eating this way? My goodness…enablers and sabotagers surround us, beware! Be strong! I’m used to it though, I just smile and say “no thanks.”

Crunchy veggie toss is a colorful and flavorful salad! Who wouldn’t love this!? Crisp carrots, green beans, water chestnuts, garbanzo beans and more! Salads are light and won’t hold you down! They’re delicious and nutritious!
- 1 lb. carrots, julienned
- 16 oz. frozen French-style green beans, thawed
- 2 15 oz. cans garbanzo beans (chickpeas), rinsed and drained
- 2 8 oz. cans sliced water chestnuts, drained
- 1 14 oz. can bean sprouts, drained
- 1 cup slivered almonds, toasted
- 1 bottle (8 oz.) Italian salad dressing (or, make your own dressing using balsamic vinegar & olive oil)
In a bowl, combine first five ingredients; mix well. Add almonds & salad dressing; toss to coat. Cover and refrigerate for 4 hrs. before serving. Serves 12.
**Tip: For a pretty presentation, serve this in a salad bowl that has been lined with beautiful green salad leaves (green-leaf lettuce works nicely), so that the tops of the leaves reach the top of the bowl, then pour the salad into the lettuce lined bowl.

I remember in my younger days how we would rationalize pizza being a nutritional meal. We’d say it is ‘all inclusive’ so to speak! It has grain, dairy, protein, veggies and even fruit…WOW! Why don’t we just refer to it as the SUPER MEAL?? R – I – G – H – T!! Ok then, whatever makes you feel better about your eating habits!
You want to talk SUPER MEALS? Let’s talk SALADS!! Get your ‘greens’ mix on, and make sure there are many variations – don’t stop at boring old lettuce!! Do an herb mix, with non-everyday lettuce! Try shoots and sprouts…go for it!! Add in nuts, seeds and unique fruits! Make your own vinaigrette, or simply use extra virgin olive oil with balsamic vinegar! This brings out the flavors even MORE! I remember the days of ‘ranch dressing’ – I was truly missing out!
Speaking of salads, there is an american favorite we all love – potato salad!! I make my own version and people LOVE it! I simply use ‘Vegenaise’ instead of mayonnaise, and eliminate the ‘egg.’ Everything else is the same!
August is the hottest month – well, at least here in PHX, AZ! Salads are the way to go!
