My cooking class last night was a huge success. All who attended enjoyed the food, had a great time, and left a little more knowledgeable (at least that’s what they told me! 🙂 ). Thank you Gluten Free Creations Bakery for donating Herb Loaf Bread, everyone LOVED IT!

Cooking is a big part of my life and always has been. The foods that I now eat have certainly changed, but I must say I truly enjoy food more now. Living in a veggie world has reset my mind, body, spirit, health AND taste-buds! I used to drench my foods in ranch dressing – what’s the point? I may as well just drank the ranch straight from the bottle and thrown the food part away. The same with anything else, it was always ‘buried’ in something, perhaps butter, sour cream, cheese, fat ladened dressings and so on.

But now, I love my beans, lentils, gluten free grains and all the wonderful, tasty, nutritious and beautiful fruits and veggies that we are so blessed to have – straight from the caring hands of Mother Nature.

In last night’s class I made my favorite veggie dish, `goulash’. I grew up eating this, as my father and mother both would make it quite often. It’s a delicious Italian dish. My dad had a small garden and grew tomatoes, squash, peppers and maybe a few other items. Eating fresh, from ground to table, especially when grown in your own backyard, just doesn’t get any better. Lee and I would LOVE to garden, we just can’t seem to make it happen here in Phoenix…it’s TOOO DANG HOT. Although, I do know some people who have had success at gardening here, unfortunately we just haven’t. If the day comes we move back East or some other part of this wonderful country (GOD BLESS THE USA!), where it actually rains every now and then, and the temperatures don’t broil your skin when you walk to the mailbox, we will attempt our own garden. Oh what a happy day that will be!

I also served Baba Ganoush & Socca Bread for appetizers (click here to see an article I wrote about Socca (nicoise chickpea pancake). M-m-m – I love this bread, fresh and hot right out of the oven. ME-gan Carrot Cake was served for dessert. It was a meal to be savored & remembered!

While everyone was enjoying the food last night, I didn’t hear anyone say they wished they had a steak or piece of fish to go with the meal. Which leads me to believe that most of our eating habits are exactly that…HABITS.

If you are looking to feel better, look better, have more energy, just an overall health, mind and body improvement, try on the ME-gan Lifestyle and see how it feels!
