I love when people say to me “That’s rabbit food you’re eating,” I answer right back with a smile, “Yes it is, and it’s great rabbit food too! Want some?” Little do they know that I have 4 children that are bunny rabbits! 🙂
I could eat a salad every day. Some variations are soooo good that I make them over and over. Sometimes I will make a salad based on what I have on hand, and other times I simply like to experiment with new items. A salad for me is a meal, so I like my salads loaded with all sorts of goodies. This one salad I had the pleasure of eating in CA was the bomb! It was loaded with tons of roasted veggies: eggplant, peppers, corn, okra, artichokes and even fresh avocado and sun-dried tomatoes! Simply beauty to the eye and taste buds!
Then there may be times when a side salad is in order, but even then it can still be a masterpiece of beauty and taste, such as this simple yet delectable one designed by my sister-in-law, made up of spinach, fresh strawberries, a few onions and some roasted sweet mini peppers on the side – Yummy!
There are also heartier salads such as cold quinoa, mixed up with veggies and seasonings. This is a healthy and much more flavorable replacement to the traditional potato or macaroni salad. Definitely a favorite of mine!
Quinoa is a great source of protein, as are lentils. Cold lentil salad is also a wonderful option for salad lovers as myself.
