Ain’t it the truth! Especially on a cold, fall or winter day. Remember when you were a kid and got sick, your mom would make you chicken soup? Those were the good ol’ days! You got cooked for, fed, and taken care of…ahh…memories.

With cooler weather on its way, I will be providing some delicious and nutritious recipes for you to try. Every region or country has its own favorite soup or stew that it’s proud of. There are recipes from all around the globe – why not venture out and try new things? No matter what recipe you choose, you can’t go wrong because everyone loves a good bowl of soup or stew!

Let’s start with Garden Gazpacho, before it gets too cold. It’s uncooked, made from pureed vegetables and is served cold.

Ingredients

  • 2/3 cup  fresh roasted red bell peppers (if you use bottled they must be drained)
  • 1 tsp. minced garlic
  • 1 (46 oz.) can vegetable juice, divided
  • 1 cup peeled seeded, finely chopped cucumber
  • 1 cup finely chopped green bell pepper
  • 1 Tbsp. red wine vinegar
  • 1/2 tsp. pepper
  • 1 (15 oz.) can chickpeas (garbanzo beans), drained

Garnish

  • 30  thin cucumber slices (0ptional)
  • Dill sprigs (0ptional)

Directions:

Place roasted red bell peppers, garlic, and 1 cup vegetable juice in a blender; process until smooth. Pour mixture into a large serving bowl; stir in remaining vegetable juice, 1 cup cucumber, and next 4 ingredients. Cover and chill at least 1 hour. Spoon soup into bowls; garnish with cucumbers slices and dill sprigs if desired.

Makes 10 1 cup servings.
