I often get asked about the foods I eat and what I eat for breakfast, lunch, dinner…so on! I get a chuckle out of it because for some reason eliminating meat, dairy, egg & gluten tends to make people think there is nothing left!! Ohhh…if they only knew!! For the past week or so, Lee and I have been doing brunch and dinner only! In this Arizona heat it’s just about too hot to even think about eating! It has worked out great with no snacking in between other than fresh fruit or vegetables! Today for ‘brunch’ we had hash browns, guacamole, cold black bean & corn salad – all homemade, and corn tortillas! This was an awesome lineup! We layered the corn tortillas with all ingredients and enjoyed mini breakfast burritos!
Lee and I both remember a time when we would eat a ‘traditional’ breakfast such as eggs, bacon or sausage, biscuits & gravy… oh my! No sooner than we would finish eating, we would feel like we just wanted to go lie down and go back to sleep! Not anymore! Now after eating, we are full of energy and ready to get on with the day! So for anyone who wonders if we miss eating meat, dairy, egg, and gluten the answer is plain and simple –
No! Not a chance!
