Do you love olive oil and garlic? If so, you’ll LOVE Salmoriglio! Growing up, my dad would make this when steaks were served – each bite of steak is dipped in the Salmoriglio! This is a very simple, yet indescribably delicious treat! In a small bowl, mix olive oil, freshly minced garlic, some oregano & a pinch of red pepper flakes (see measurements below), and once the steaks are ready, pour a tablespoon of the steak juice into it – stir, and enjoy! Variations of this will also include lemon juice, chopped parsley, and even red wine vinegar or balsamic vinegar as well. I’ve made this for my kids, and I’m sure they will also carry on the tradition!
Let’s make this ME-gan style Salmoriglio now! First of all, throw away the steak and its juice! Secondly, Salmoriglio is, as I like to say…friendly! It gets along with many food dishes! Not only can it be used as a dip (minus the steak juice of course) for breads (my favorite bread is the Herb Loaf Bread from Gluten-Free Creations Bakery), it can also be a topping to various sautéed, baked or grilled veggies, as well as stirred into pasta with chickpeas, fresh Italian parsley & salt n’ pepper! M-m-m!! Simplicity meets delightfully delectable, in others words DE-LISH!
I try to stress to people that for the most part if there’s a dish I previously enjoyed, I now make simple and minor adjustments to it using my own creativeness, turning them into ME-gan-ly delicious meals!! This ultimately enhances them, making them healthier & raising the flavor bar quite a bit! You can’t even imagine it until you do it! By eliminating meats, dairy, egg and gluten, your body cleanses itself all the way from its taste buds, to its digestive track – and beyond! Food will never have tasted so good to you – every bite of fruit, vegetables, gluten free grains, legumes, herbs and spices will make your mouth pop with pleasure!
You don’t have to be Italian to be ‘afraid’ of saying good-bye to such delicious foods – but I am here to say to everyone, it won’t happen! It’s OK! Fuggetaboutit! You’re not saying good-bye to delicious foods at all! Trust me! For the foods that I gave up, I’ve gained many more naturally gratifying, in both flavor and nutrition, foods in their place! Foods I’ve never heard of before! I went in search of new items by reading and going to farmers’ markets! I broadened my horizons and learned how to cook with all these new treasures! I have spiced up my entire life this way! Variety, it’s the spice of life! I didn’t throw away my old cook-books, no, I simply altered my favorite recipes and found out they could be even better! Who would have thought? Wow! Be creative!
Try grilled eggplant with Salmoriglio drizzled over it tonight! Mangia!

P.S. It’s very common with Italians to throw a little of this and a little of that together, coming up with an extraordinary creation! This is due to their familiarity with foods and spices and years of tradition passed down to them. But I certainly understand that many of us are just beginning to get familiar with home cooking and would appreciate exact measurements! So with that said, here is the recipe for Salmoriglio – Mary’s ME-gan Style version! However, please keep in mind – it’s all according to taste! So add more or less – however you like it!
2/3 cup of extra virgin olive oil
1/4 to 1/2 tsp. dried oregano (fresh would be best!)
1 large garlic clove, finely chopped
1/8 tsp. crushed red pepper flakes
** I do not use salt. If you choose to do so, please start off with very little, perhaps 1/8 tsp. **
Mix all ingredients together well in a small bowl – serve and enjoy!
